poha with capsicum peanut

Ingredients:

  • 1 cup flattened rice — (check in aisle 1)
  • 3 tablespoon oil —(check in aisle 6)
  • 1 tablespoon mustard seeds —(check aisle 2)
  • 5 -6 curry leaves – (check refrigerated section)
  • 2 tablespoon raw peanuts —(check aisle 3)
  • 3 tablespoon potato chopped in small pieces
  • 1 small onion finely chopped
  • 2 tablespoon finely chopped carrot
  • 3 tablespoon finely chopped cauliflower –(check refrigerated section)
  • 2 tablespoon finely chopped capsicum
  • 3 tablespoon green peas
  • 2 tablespoon finely chopped cilantro
  • 1 green thai chilli – chopped —(check refrigerated section)
  • Salt – add to taste – (check in aisle 2)
  • ½ teaspoon red chilli powder —(check in aisle 2)
  • ¼ teaspoon turmeric powder —(check in aisle 2)
  • ¼ teaspoon black pepper powder —(check in aisle 2)

Preparation Time: 20-25 min approx
Serving: 3-4
Method:

  1. Put oil in deep vessel on medium heat. When it gets hot, add mustard seeds, peanuts and curry leaves to it. Mix well, when the peanuts start turning light brown then add chopped potato to it. Keep stirring till the potatoes turn a little light pinkish. Now add all the chopped vegetables (onion,carrot, capsicum, cauliflower, green peas and thai chilli) to it and stir well. Add salt (according to taste), red chilli powder,turmeric powder and black pepper powder and stir well. Cover the vessel on medium heat for 5 minutes. Make sure the vegetables are tender.
  2. Wash Poha (flattened rice) and drain the water completely. Add poha to the vegetables and mix well. Garnish it with cilantro and mix well. You can now turn off the heat and serve.
Poha can be eaten with yogurt or you could add a little lemon juice to it. It is a very healthy breakfast!
